Project Challenge
A major seafood processor needed to upgrade their production line to quickly freeze 2,000 kg of shrimp per hour. The challenge was to achieve Individual Quick Freezing (IQF) to maintain product quality and texture, while minimizing dehydration and integrating seamlessly into their existing processing line.
Solution Provided
We installed a custom-designed dual-drum spiral freezer system. The compact vertical design saved valuable floor space. The system utilizes a high-velocity, low-temperature airflow (-35°C) to crust-freeze the product surface instantly, locking in moisture. The stainless steel construction and clean-in-place (CIP) system ensure the highest levels of hygiene.
Project Results
The new spiral freezer achieves the target capacity of 2,000 kg/hr, producing high-quality IQF shrimp with a dehydration rate below 1%. The freezing time per batch was reduced by 60%, significantly boosting overall production efficiency.
